Wikis are where documentation goes to be outdated. I put network diagrams in Git, in the same repo as the Terraform. If the infrastructure changes, the diagram changes or the CI fails.

Two. Hetzner for everything, AWS S3 for backups only.
S3 isn't a VPS so I don't count it. Some people would.
