Vultr bare metal allows iPXE. I have used it. The 120 USD tier, Stockholm. Real hardware, real iPXE, real pain when I misconfigured and had to open ticket. But they did not fake anything.
My 'dedicated' server was actually a VM with fake lscpu output

In Mumbai I see Contabo has datacenter. I wonder if same practice there. Local customers less likely to know GDPR, less likely to fight.

RAJ Contabo Mumbai is same company, same practices. My lawyer says GDPR does not cover Indian customers but consumer protection law might. If you know someone affected there, put them in touch.

Has anyone tested Hetzner? Their dedicated is expensive but I am considering switch.

Hetzner is not in the company list but I have used them. Auction servers, real hardware, you get IPMI access. I have powered my own machine off and on from Helsinki. No virtualization hides from IPMI.
