Back to the original question: should you worry about Intel discontinuing E5 v4? Only if it forces your provider to raise prices or degrade density. The CPU itself will keep working.
This. My worry is not the silicon. My worry is Contabo using this as an excuse to change pricing or push people to newer plans.
They already did that with the NVMe upgrade cycle. Old plans stayed on SATA, new plans got NVMe at slightly higher price. Same playbook.

Contabo's pricing is their entire brand. They will eat margin before they break the psychological 4.99€ barrier for the entry plan. The risk is hidden limits, not sticker shock.
Watch for "fair use" policy tightening, not invoice changes.

I found a Dell R630 with E5-2680 v4 in a dumpster behind a WeWork here. Threw Proxmox on it, runs my home lab fine. These chips have years left for non-production use.
The real EOL problem is power efficiency. Newer chips do more per watt. At scale that matters to the provider, not to your single VPS bill.
Hetzner's auction servers are full of this generation. They are transparent about it and price accordingly. I respect that more than "modern hardware" hand-waving.
