Tallinn has good birdwatching too. I tried the same with Joplin on a Contabo VPS in their Nuremberg location. 4 EUR, 8GB RAM, overkill for notes but I also run a Factorio server on it. The birds lose to the factory every time.
Non-tech hobbies of this forum — what do you do when the servers are fine?
Istanbul traffic is worse than any server outage. My hobby is walking. Not hiking, just walking through the city, 10-15km on weekends. No GPS, no Strava, no metrics. The opposite of uma's approach and I think that is the point.
I do carry a small film camera. Developing at home, black and white only. The darkroom is the one room in my apartment with no ethernet cable.

Update: the T60 now runs OpenBSD. The USB port held. I use it for writing, actual writing, fiction. No internet on that machine. A separate T400 for the internet, because one must check prices.
The keyboard on the T60 is better than any mechanical I have tried. Including tomchan's gateron yellows, no offense.

For the servers I use a OVHcloud VPS in Beauharnois for my dev tests. 6 EUR, is good price for Brazil because the exchange is bad. The latency to SP is 140ms but for tests is OK.
Have you looked at their Singapore location? Still far, but maybe 220ms instead of 280ms via Europe. Not that it matters for dev tests.
My hobby is boring. I track IPv4 lease prices on https://bgp.he.net. The Zurich market is steady, /24s around 8000-9000 CHF annual. I have a spreadsheet. That is the hobby.
