You can try make a server up with dump from last month, then apply binlogs if you have. What database engine? Regards.
Binlogs need binary logging enabled, which Hetzner disables on flash-sale tiers.

I cant believe you people are talking about regulations when this person has a dead database and I know exactly how this feels because I had a similar thing happen with Contabo last year except it wasnt a sale it was their "upgrade" window and I was eating cereal at the time special k with strawberries and my cat Mr whiskers was sitting on the router which I think made the connection worse but also it was raining that day in tucson which is rare and I think the humidity affected my laptop screen and I lost three years of photos and nobody read my post then either and I am still angry about it

That's your floor then. Restore it, check what tables you can reconstruct from application logs if you have any. Order records, access logs, anything that shows state changes.

Old host was OVH VPS, I cancelled same day because Hetzner price was 70% less. They wiped it within 24h. I have nothing there.
This is why I keep old host running minimum 30 days after any migration. Three datacenter fires taught me that "savings" are expensive.
