Just surrender (look, I know, I know, the idealism is cute (really it is (I self-hosted for three years (2019 through 2022 (don't ask))))) but the deliverability arms race (spf, dkim, dmarc, bimi (whatever that even is now)) isn't a weekend project anymore (it never was (but especially not now)) and your OVHcloud IP range is probably pre-warmed in the wrong direction (burned, I mean (everyone's first VPS is for spam (statistically (the providers know this))))
If you must (you must, apparently (I can tell by the emoji count ( indeed))) then mailcow is the less painful option (docker-based (which means you'll eventually have a compose file with forty services (you will (I've seen it)))) but keep a backup MX at something boring (Fastmail (Proton (literally anything with a reputation team))) for when your primary gets blacklisted (it will (probably Tuesday (around 3am (the cron jobs))))
