What NUC you running? I got a J4125 with 16GB and it handles 3 KVMs fine. Proxmox + ZFS. Not fast but works.
N5105 8GB. Old. 3 KVMs and it starts swapping. LXC I can do 10 easy.

KVM. I still run Core 2 Duos. If I used LXC on those ancient kernels I would be hunted for sport.

Fritz you are technically correct but nobody's GDPR auditor is inspecting their home lab. Let's be real.
That said I vote KVM because I work in support and I've seen too many "container escape" tickets that turned out to be real.
The regulation does not distinguish between "home" and "corporate" for personal data. If you process data concerning health, biometrics, or union membership, the obligations apply regardless of location. I am not suggesting an audit will occur. I am stating that the technical measure is inappropriate.
But this is a forum, so I will also say: enjoy your container escape.

This is why I prefer the Unix philosophy. One tool, one job. KVM is a big hammer. LXC is duct tape. Both violate simplicity but at least KVM fails obviously.
Following this thread. Currently on Proxmox LXC for Plex, *arr stack, Home Assistant. No issues 2 years.
Portugal electricity is insane. LXC saves me maybe 8W vs KVM? Not enough to matter. I still use KVM because I like knowing my Nextcloud is behind actual hardware boundaries.
THIS. With LXC you find out months later. With KVM you find out immediately because the VM wont boot. I prefer immediately.
What about firecracker? AWS uses it. MicroVMs. Best of both?
