Hetzner is not perfect. They are boring. Boring is good.
This. I moved 14 boxes to Hetzner after my fourth burn. Nuremberg and Helsinki. Price is middle, uptime is middle, support is "go read the manual" but they have been around since 1997 and they are not reincarnating.
Still keep 3 at BuyVM for the DDoS protection. Different risk profile.

I rent bare metal from Hetzner
Hetzner does not have a datacenter in Bristol. My shed does. Latency to London is 4ms, to Frankfurt 12ms. For my use case the VPS burns were acceptable risk until they were not.
I now self-host on a fibre line with dynamic DNS. Not for everyone. But I control the kernel.

In France fiber is symmetric but dynamic IP is a pain for SMTP. Orange, Free, SFR all the same problem. I stay with OVHcloud for mail, real OVHcloud not the scam, and Hetzner for the rest.
The scam "Vultr" had a panel that looked like real Vultr but the logo was off-center, I noticed after. Details.

Different. "OVHcloud" used some Lithuanian payment aggregator I did not recognize. "Vultr" used Stripe but the descriptor was different from "Vultr Holdings Corporation." I have the statements. Should have checked then.

I got burned by "Digital Ocean" with the space missing once. Descriptor was "DIGOCEAN BILLING." $2.50 for 2GB. Lasted 5 months. I am not smart man but I am persistent in my mistakes.
$3/year. 128MB RAM. Pure happiness.
